We’re often asked to explain the difference between cast iron and carbon steel skillets. Both retain heat exceptionally well and go from stovetop to oven to table. Carbon steel is a bit lighter and heats up a little faster – perfect for the day’s catch of fresh trout to green beans stir-fried from our garden.
